I make sure my cheese is a...I tweeked your technic.<br />I make sure my cheese is at room temp.<br />I sterilize my half pint or my wide mouth pints in the oven @ 250f for 20 minutes. <br />I place my largest roaster on the burner with one of those round metal trays I use in my pressure cooker to keep the glass of the bottom of the pot and I half fill with water and bring to a boil.<br />I cut my blocks of cheese into cubes and make ready with a large bowl of cubed cheese. <br />Now the tricky part.<br />I take one jar out at a time, fill it with cheese, and place into the boiling water.<br />By the time the last jar is added, the first jar in needs to be topped up with cubes of cheese and then I just keep going until all the cheese is melted and I have my plastic de-bubbler stick to keep the cheese turned in the jar.<br />I then take out the jars of cheese one at a time, wipe the rim with vinegar, put the hot lid and ring on the jar and tighten finger tight. I place this into my almost ready hot water bath and keep on repeating. <br />I water bath for 20 minutes because when I did 40 minutes, the mozzarella cheese I was canning at the time turned darkish, a light brown. One jar didn't seal so I ate it and it was fine. <br />I've canned Cream Cheese, Mozzarella, Mild Cheddar, and tomorrow I'll try swiss and Havarti.<br />I have been scared to can my Old Cheddar as I have been informed that the cheese will keep on ageing just like it is supposed to. <br />Anywho, thanks for the info, it really helped. My Mom had seen the Kilchers' on the show Alaskan Frontier talk about the Balm of Gilead. <br />My Mom, bless her heart, researched and finally made a good size batch of the balm. Again, my 59 yr old brain has seen and heard it all, so I was very skeptical. <br />Mom sent me home with about a 1/2 pint of the balm and I started using it on a very destroyed shoulder/rotator cuff. I m refusing ANY surgery for it so some days are straight from hell. I used the balm one desperate afternoon. Within 30 minutes I had ZERO pain and it lasted for 12 hrs! I could have done a happy dance! I also suffer from D. D. D. and a deteriorating spine with a high degree of pain. Collected a few cups of sticky buds off them. <br />Covered with olive oil in a clear glass jar, sealed the top and set in a window for a month, then poured off the oil into small containers. Have tried it on cuts, rashes and eczema; works very well on all. Looking forward (not really) to my next bruise and sore joint so I can try it on that, too. <br />Will try some vitamin E as a preservative and add some beeswax to some; I expect both and/or either to extend the shelf life.
